This is what I need:
– 600g fresh cod fillet
-1 red onion
– 5 branches fresh coriander
– ½ teaspoon grated ginger
– 25cl Vitamont lemon ginger pure juice
– Chili powder
– Salt and pepper
– Olive oil
– 100g sweet potatoes for accompaniment
Let’s get started!
1- Boil water, add whole sweet potatoes. Remove them when you can lightly push a fork into them. Set them aside to let them cool.
2- Dice the cod and arrange it at the bottom of a high sided dish
3- Cover with lemon-ginger juice and mix well.
4- Cut the onion into thin slices, grate the ginger and chop the coriander. Add them to the cod. Salt, pepper and spice to your liking.
5- Mix well and leave to marinate for about 15 minutes in a cool place.
6- Last step: Arrange the sliced sweet potatoes at the bottom of soup plates. Then add Ceviche in the shape of a dome. Finish with a drizzle of olive oil.
The little trick
As an accompaniment, you can replace sweet potatoes with fried plantain bananas.
