This is what I need:
– 6 chicken legs
– 2 candied lemons
– 20cl Vitamont pure lemon juice
– 5cl Vitamont Extra Strong Ginger
– 100g pitted olives
– 2 large onions
– 2 cloves garlic
– 1 teaspoon turmeric
– 1 teaspoon paprika
– 3 branches of fresh coriander
– Some saffron
– Salt, pepper
– Olive oil
Let’s get started!
1- Fry minced garlic and onion in a frying pan with a little oil.
2- Once the garlic and onion are browned, pour them into the tagine dish (or a casserole). Add the olives and the chicken legs.
3- Sauté for about 15 minutes over medium heat.
4- Add turmeric, paprika, saffron, salt and pepper, according to your taste
5- Then add candied lemon cut into strips and add the lemon & ginger juices.
6- Stir well and add 30cl of water.
7- Cover and cook over low heat for about 1 hour, until the chicken is tender. If needed, add water during cooking.
8- Place the chopped fresh coriander just before serving. Enjoy your meal!
The little trick
Serve with semolina and raisins.
