Crème brulée thé

Crème brulée with Sencha tea

This is what I need:

– 60cl of whole milk
– 8 egg yolks
– 100g powdered sugar
– 4 Sencha tea bags
– 30g brown sugar

Let’s get started!

1- Preheat the oven to 100°C
2- Heat the whole milk and the tea bags in a saucepan for 5 minutes.
3- Remove the tea and bring the milk to a boil.
4- In a bowl, blanch the egg yolks and sugar and pour the boiling milk.
5- Pour the mixture into the ramekins and bake for 30 to 40 minutes.
6- Let the ramekins cool then sprinkle the brown sugar preparation and caramelize the sugar with a blowtorch.

The little trick

Nothing is lost, you can use your egg whites in another recipe!
