Vinaigrette au pur jus de clémentine

Vinaigrette with pure clementine juice

This is what I need:

– 6 ml of Pure Clementine Juice
– 15 ml of rice vinegar
– 1 small teaspoon of sugar
– 4 tablespoons of mayonnaise
– Salt and pepper

Let’s get started!

1- In a small saucepan, bring to a boil the clementine juice, rice vinegar and sugar. Allow to reduce until about 2 tablespoons (or 30 ml) of liquid is obtained. Allow to cool.
2- In a bowl, mix the mayonnaise with the reduction of clementine juice and vinegar. Salt and pepper to your liking.

The little trick

Store in the refrigerator between different uses.
